Ayala Coffee was founded in 2021 by Trixie Jose and Matt Reyes, who left their careers in accounting and IT to build New Jersey's first Philippine specialty coffee shop. What began as a humble mobile coffee cart quickly grew into a grab-and-go spot and, in less than three years, a full brick-and-mortar café. Since then, Ayala has been ranked 4th in the world for Coffee & Tea on Beli, and its menu has grown to include food and pastries made in-house.

At its heart, Ayala offers a modern take on Filipino cuisine, honoring the nostalgic, traditional flavors so many people know and love while presenting them in unique, reimagined ways. That same care starts with the coffee itself: Ayala is proud to be the only specialty coffee shop in New Jersey that imports and roasts its own beans from the islands, bringing them straight from the farms to your cup.

Their mission has always been to uplift the Philippines and to put coffee, culture, and community at the center of everything they do. Trixie and Matt remain dedicated to sharing the incredible flavors and talent of their culture. For them, Ayala has never been just a coffee shop. It's a love letter to their roots, and every cup poured and every dish served is a small tribute to the family, traditions, and motherland that shaped them.
